Healthy Loaded Beef Skillet!

I was looking for something healthy to make for lunch and nothing sounded appetizing. So, as per usual, I wandered through my kitchen and started looking for something that sounded decent. I decided to use up some veggies and make something healthy! That’s where this cauliflower-based bubba comes into play 🙂

I try to always keep a few bags of frozen, riced cauliflower on hand at all times. I like to use it in place of white rice for the most part. But it’s also really fun to experiment with. This recipe is one of those experiments. And lucky for me (and you if you try it out), it was pretty darn tasty!

As always, feel free to switch up the ingredients to fit your tastes! Use different veggies or meats, drizzle with soy sauce for more savory flavor, top with hot sauce or pickled jalepenos for a little kick: the possibilites are endless!

But my favorite thing about this recipe? It makes 4 servings at just 2 Weight Watchers Special Points a pop!

Ingredients:

•1 head of cauliflower, riced (or pre-riced cauliflower)
•1/2 pound extra lean ground beef, cooked
•1 small green pepper
•1/2 yellow onion
•1 cup sliced mushrooms
•1 tbs garlic powder
•1 cup shredded cheese (I used fat free cheddar)
•salt and pepper to taste

 

Start by getting a medium sized pan warmed up over medium heat on the stovetop.  Spray the pan with Pam or olive oil spray.

Chop the onions and add them into the pan.

Chop the green pepper, and add it in as well.

Let the onion and pepper cook down until they start to soften and turn golden. Add the mushrooms in and let them warm through.

Toss in the garlic powder, salt, and pepper and mix well. (You can add a tablespoon of water if the mixture is too dry).

Toss in the riced cauliflower. I pre-cooked mine in the microwave before adding it, but it can be added frozen as well. Just so long as it is warmed all the way through, it’ll be great.

I had some leftover cooked ground beef in the fridge, but if yours isn’t cooked, just brown it up in a skillet over medium heat until no longer pink. Then add it to the cauliflower mixture.

Mix everything together and add the cheese.

Stir it until the cheese just starts to melt, and serve!
